Course Overview

Practice fundamental patisserie techniques to create a variety of decadent pastries, baking and dessert masterpieces. Explore how to make artisan bread, work with chocolate and create an array of specialty pastry desserts. Through expert demonstration and hands on experience, this intensive five-day culinary boot camp will allow you to be mentored from expert pastry chefs.

Fundamental topics covered include: Breakfast pastries (Danishes, croissants, muffins, brioche, biscuits); Classic European tarts and entremets; Glace, sorbet, granite, parfait; Crepes; Custard, creams, mousse; Sauce anglaise, caramel, fruit coulis; Baked soufflé / sabayon; Plate decoration (templates, tuile, brandy snap, chocolate); Petit four and Friandaise, and Artisan breads.

With the skills gained in this course, you will be able to make exquisite pastries at home.

Receive a comprehensive recipe guide and complete pastry chef uniform to fully embrace the culinary experience. All meals and beverages are included for the duration of the boot camp.

Prerequisite: You must be at least 18 years of age, as alcohol may be involved.

  • Remote Independent: Where: Online anytime. When: No set class meetings. Coursework is accessed on-demand and online, with no instructor support. While students choose when to do coursework, there may be set due dates and deadlines.
